MasterChef India Season 7 contestant Nayanjyoti Saikia is one of the Top 6 finalists who has been performing very well in many challenges of the popular cooking reality show

The 26-year-old self-trained cook from Assam's Tinsukia was discovered by Michelin Star Chef Vikas Khanna on Instagram and he convinced the former’s father to let him show his cooking talents on MasterChef

With his cooking skills, Nayanjyoti has not only impressed the three judges of MasterChef India Season 7- Vikas Khanna, Ranveer Brar, Garima Arora- but many other chefs like Chinu Vaze as well

Here is a pasta recipe of Nayanjyoti Saikia that can be perfect for a quick supper on hectic weekdays-

Ingredients-  1 cup fresh basil leaves, ½ cup fresh blanched spinach leaves, ¼ cup toasted walnuts, 1/3  cup virgin olive oil, 2 garlic cloves medium size, pinch of salt and pepper, 80g finely grated Parmesan cheese, 2 cups pasta of your choice(fresh garganelli, penne or fusilli), Fresh lemon

Method-

1. Blend the garlic, salt and walnut together a few times in a blender. Add the cheese, pepper and blend again.

2. Add the basil and spinach leaves and continue blending until you get a paste, but don't overdo it as the heat of the machine may turn the pesto bitter.

3. Now gradually add the oil, blending until just combined. Cook the pasta according to the instructions on the packet.

4. Drain, then add the pesto to the pasta, little bit of extra virgin olive oil and pasta water(if needed) and toss well.

5. Garnishwith fresh basil leaves, walnuts, and parmesan cheese. Squeeze some lemon juice on top. Serve immediately
