Ingredients- 1 cup fresh basil leaves, ½ cup fresh blanched spinach leaves, ¼ cup toasted walnuts, 1/3 cup virgin olive oil, 2 garlic cloves medium size, pinch of salt and pepper, 80g finely grated Parmesan cheese, 2 cups pasta of your choice(fresh garganelli, penne or fusilli), Fresh lemon

1. Blend the garlic, salt and walnut together a few times in a blender. Add the cheese, pepper and blend again.

2. Add the basil and spinach leaves and continue blending until you get a paste, but don't overdo it as the heat of the machine may turn the pesto bitter.
3. Now gradually add the oil, blending until just combined. Cook the pasta according to the instructions on the packet.
4. Drain, then add the pesto to the pasta, little bit of extra virgin olive oil and pasta water(if needed) and toss well.
5. Garnishwith fresh basil leaves, walnuts, and parmesan cheese. Squeeze some lemon juice on top. Serve immediately
