The first season of the well-loved cooking reality show MasterChef India was won by Pankaj Bhadouria

A former school teacher, Bhadouria had quitted her 16-year-old teaching career to participate in MasterChef India

Bhadouria is a owner of two restaurants Café By Default and Tramp Tree Café located in Uttar Pradesh and also runs a cooking school named Pankaj Bhadouria Culinary Academy

Besides hosting several cooking shows, Bhadouria who is India’s first MasterChef also wrote a number of cookbooks like Barbie I Am A Chef , Chicken from My Kitchen etc

Here is a delicious Chana Masala recipe of MasterChef India Season 1 winner Pankaj Bhadouria  perfect for consuming as a snack on Navratri and Iftar-

Ingredients: 2 cups Kala Chana (Bengal gram), 3 tbsp Oil, 2” Cinnamon, 2 Black cardamom, 4 tbsp Coriander seeds, 7-8 Cloves, ¼ Mace, 2 Bay leaves, 2 tsp Cumin, 1 tsp Pepper powder, 1 tbsp Coriander powder, 1 tsp Red Chili Powder, 2 tbsp Dry mango Powder, ½ tsp Cumin Seeds 1/8 tsp Asafoetida, Coriander leaves to garnish, Salt to taste

Method:

1. Soak the Bengal gram overnight or for a minimum of 8 hours.  Pressure cook it with the bay leaf, black cardamom, 1tsp salt in 3 cups water for 5 whistles or till done.

2. In a pan, dry roast the Cinnamon, Black cardamom, Coriander seeds, Cloves, Mace, Bay leaves, Coriander seeds, Cumin seeds and Cloves.

3. When fragrant and lightly coloured, remove from heat and cool. Add this mixture in a blender along with coriander powder, red chili powder and the dry mango powder and blend

4. Heat oil to medium, add the cumin seeds and allow to splutter. Add Asafoetida and the prepared chana masala and mix well. Add half cup water and bring to a boil. Cook till the oil separates. Add the boiled Bengal grams and toss well.

5. Cook till all the water is absorbed by the spices and the spices coat the chana well. Garnish with chopped green coriander and serve.
