Chennai based Aruna Vijay was one of the finalists of MasterChef India Season 7 who impressed the judges- Ranveer Brar, Garima Arora, Vikas Khanna- with her awesome cooking skills

Although she was evicted mid-way and could reach up to the 4th rank in the show, her showcasing of less popular South Indian dishes earned a lot of appreciation from the judges and viewers

An entrepreneur by profession, Vijay is also a food blogger who posts several recipes of food items on her Instagram handle aruna_vijay_masterchef

Here are two special cucumber recipes of Vijay that you can cook for breakfast easily in a few minutes

I. Cucumber Pancakes or Toushe Bhakri

Ingredients- Grated cucumber - 1 cup, Grated coconut - 1/4 cup, Rice flour - 2 tbsp (optional), Sooji - 3/4 cup ( approx), Green chilli – 1, Jaggery - 1 tsp, Chopped coriander – handful, Salt to taste, Curry leaves - few torn, Ginger chopped - 1 tsp

Method-

1. Mix the grated cucumbers with rest of the ingredients in a bowl and let it sit for 10 mins. 2. Once the sooji absorbs the liquid and form a pilable dough, take a small portion of it. Flatten it in a greased tava and cook on slow flame with some oil. 3. Cook till it is golden brown and serve hot with a dollop of butter

II. Cucumber Raita

Ingredients- Grated cucumber - 1/2 cup, Curd - 1 cup, Mustard seed powder - 1 tsp, Green chilli - 1 small, Turmeric powder - 1/2 tsp, Coriander leaves - 2 tbsp, Salt to taste, Mustard oil - 1 tbsp

Method-

1. Grind the mustard seeds to a coarse powder in a mortar pestle and secondly whisk the curd in a bowl till it is smooth 2. Add the remaining ingredients including the powdered mustard seeds and mix well. Refrigerate for an hour before serving.
