To prepare a sun dried tomato and roasted garlic dressing for your salad, start by rehydrating dry sun dried tomatoes in warm water if needed
Meanwhile, roast 3-4 garlic cloves on a pan for 10-12 minutes on low flame until they are soft and golden and then let it cool
Blend the rehydrated tomatoes, roasted garlic, ¼ cup extra-virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon honey and season with salt and pepper
