- 1ยฝ tsp cinnamon powder
- ยฝ tsp nutmeg powder
- ยฝ tsp dry ginger powder
- ยผ tsp clove powder
- ยฝ cup chopped nuts (cashews, almonds, walnuts โ optional)
Step-by-Step Procedure
1. Soak the dried fruits
Place all dried fruits in a bowl and pour warm juice or also tea over them. Mix well, cover, and let them soak for at least 8 hours or overnight. This step ensures the fruits are plump, soft, and also evenly distributed in the cake.
2. Prepare the caramel syrup
Heat sugar in a heavy pan on low flame until it melts and turns deep amber. Carefully add hot water little by little (it will bubble vigorously). Stir until smooth. Set aside to cool.
3. Prepare the stovetop โovenโ
Take a deep, heavy-bottomed kadhai or pan. Add a thick layer of salt or sand at the bottom. Place a steel stand or inverted bowl over it. Cover with a lid and preheat on low flame for 10 minutes.
4. Mix the wet ingredients
In a large bowl, whisk yogurt and also sugar until smooth. Add oil and also vanilla essence. Mix well until the batter looks creamy and uniform.
5. Add caramel syrup
Pour the cooled caramel syrup into the batter and mix gently. This gives the cake its characteristic dark colour and deep flavour.
6. Combine the dry ingredients
Sift together flour, baking powder, baking soda, and all the spice powders. Gradually fold this into the wet mixture using a spatula. Do not overmix.
7. Add fruits and nuts
Fold in the soaked fruits along with any remaining soaking liquid. Add chopped nuts if using. Mix gently to distribute evenly.
8. Prepare the cake tin
Grease a round cake tin and line the base with parchment paper. Pour in the batter and also tap lightly to remove air bubbles.
9. Cook the cake
Place the cake tin carefully on the stand inside the preheated pan. Cover tightly with the lid and also cook on the lowest flame for 60โ75 minutes.
10. Check for doneness
Insert a skewer or also knife into the centre. If it comes out clean, the cake is ready. Turn off the flame and also let it rest for 10 minutes before removing.
11. Cool and rest
Allow the cake to cool completely. For best flavour, wrap and rest it for 24 hours before slicing.
